04 2018 (April)“Welcome to Simply Cent$ible Nutrition Online Cookbook” Lindsay Hadfield (left) helps Wendy Nielson prepare for a video shoot March 14 at the University of Wyoming. Nielson is a Cent$ible Nutrition Program (CNP) educator in Rock Springs. Hadfield, the CNP media producer, is producing the series. Mary Martin, the CNP administrative assistant, steps in as production assistant. Nielson demonstrates how to make coffee cake, banana bread and other baked goods from the master mix recipe, a go-to favorite in the CNP cookbook. The goal is to make Cent$ible Nutrition recipes accessible online. Nielson, in her signature red apron, is one of 23 CNP educators who provide nutrition and physical activity education to income-qualifying adults and youth in every county and on the Wind River Reservation. Martin removes banana bread from the oven. The CNP program is funded through two USDA grants: the Expanded Food and Nutrition Education Program (EFNEP) and the Supplemental Nutrition Assistance Program – Education (SNAP-ED). The “Simply Cent$ible Nutrition Online Cookbook” is expected be available to participants in the fall.
